Medium tail-off shrimp marinated in lemon-dill vinaigrette with sweet onion and lemons. Served with cocktail picks.
Poached Salmon
A whole salmon garnished with sliced cucumber. Accompanied by baked salmon fillet; served with freshly made toast points and Dijon cream sauce. In addition, other types of fish may be offered.
Smoked Salmon
Smoked salmon fillet presented on a silver fish tray; offered with diced red onion, chopped egg, and capers. Served with freshly made toast points.
Lobster Salad
Tender lobster meat, capers, chives, tarragon and diced tomato tossed in a savory dressing. Served with small pastry shells or toast points.
Colossal Lump Crab
The largest lumps of Blue Crab meat presented in a silver shell. Offered with caper remoulade.
Crab Dip
Crab meat, celery, and green onion tossed in a lightly sherried cream sauce. Served warm in a chafing dish. Accompanied by small pastry shells or toast points.
Crab Mould
Crab meat, capers, red pepper, and spices blended with a bit of cream cheese and molded into a shell. Garnished with capers, sliced lemon and fresh parsley. Served with Bremner Wafers.
Sauteed Scallops
Sea Scallops seasoned with Cajun spices and sautéed. Served with your choice of dipping sauces.
Sauteed Jumbo Lump Crab
Jumbo lump crabmeat sautéed in butter and Spanish sherry. Served warm in a chafing dish. Offered with pastry shells or toast points.
Smithfield Ham
Thinly sliced country ham, presented on the bone and beautifully garnished. Served with petite yeast rolls or small biscuits, mustard and mayonnaise.
Roasted Turkey
A whole turkey, breast removed, sliced, and replaced on the bone. Accompanied by sliced roasted turkey breast and fruit garnish. Served with petite yeast rolls or potato rolls, Dijon mustard, mayonnaise and cranberry orange relish.
Chicken Satay
Strips of chicken breast marinated in Hoisin sauce and roasted on cocktail skewers. Offered with Thai peanut dipping sauce.
Greek Chicken
Chunks of chicken breast sauteed in olive oil and garlic then tossed with kalamata olives, Spanish olives, grape tomatoes, and lemon-feta vinaigrette. Served with cocktail skewers.
Chicken Marbella
Chunks of chicken breast marinated in white wine, bay leaves, garlic and olive oil; tossed with capers, green olives, prunes and dried apricots. Served at room temperature with cocktail skewers.
Chicken Salad
Traditional, Curried with Dried Cranberries, Oriental and many more; served with Siljan shells, sliced baguette bread, or petite party rolls.
Orange Chicken
Sliced, grilled chicken breasts tossed with oranges, walnuts, green onions, and walnut vinaigrette with orange zest. Served with cocktail skewers.
Fried Chicken
Boneless, skinless chicken breast pieces dipped in flour and deep-fried. Offered with your choice of dipping sauces.
Coconut Chicken
Strips of chicken coated in coconut and deep- fried. Offered with sweet Thai chili sauce.
Chicken Tempura
Chunks of chicken breast dipped in Tempura Batter and deep-fried. May be tossed in sweet and sour sauce or orange-horseradish glaze. Sauces may also be offered on the side.

An assortment of fresh fruit artfully arranged. Seasonal selections may include melon, grapes, golden pineapple, assorted berries, kiwi, and mango.
Grilled Asparagus
Fresh asparagus seasoned with olive oil and kosher salt, grilled until just tender. May be blanched and offered with a dip as well.
Grilled / Marinated Vegetables
An assortment of grilled and / or marinated vegetables that may include asparagus, broccoli, dilled ccumbers, roasted potatoes, artichoke hearts, mushrooms, carrots, brussel sprouts, and sliced multi-colored peppers.
Mediterranean Bar
An assortment to include stuffed grape leaves, tabuleh, hummus, roasted peppers, kibbe, and shwarma chicken. Offered with toasted pita bread.
Pate
A variety of creamy mousses and country style pates, served with baguette bread. Accompanied by Cornichon , pearl onions, Dijon mustard, and Champagne grapes when available.
